Why would you not?
Well, I prefer to use cement board or hardie backer but... I had trouble burning the last lot of plasterboard I had left over from a job 
Where does it say modern boiler needs to be installed on fireproof material
Most condensing wall hung boilers can be mounted on a combustible base. It'll say in the MIs, that a GS RGI will use to install the boiler, what's required.
If it's a 4x2 or even 3x2 stud wall, it'll support most boilers, plenty pads/dwangs/noggins behind the plasterboard & RGI is good to go!!
