Boxing off stairs

So... the house builder took up half the cupboard with crazy boxing. Ie had to crouch to get in and out but from the pics you can see the clear line where this boxing came too. So we asked to have this removed as the other house we viewed of the same design had the full cupboard (theirs was left like this actually but painted).

So I will some how tidy this up myself but would like to pick your thoughts on best way to approach this. Possibly fit battens flush to the bottom of stairs and get plaster board in.

Sounds ok, but don't allow baton to touch underside stair timbers as movement there will crack plasterboard joints.

The white curved parts of wood?

Because the stairs twist, it'll be a bit fiddly to do.
