Do people still burn off where paint on external woodwork has flaked in order to get back to wood ? I remember my Dad doing that with a blowlamp.

I have a 20 year old canopy that needs re-painting.

Burning off old paint (read: melting it) is fine, however, the old paint may have lead in it.

The H&SE recommend using a heat gun set at 500 degrees or lower.

I have a heat gun with a digital temperature range. To be honest, if I were to hold the gun in the same point, I guess that after a while, the surface temperature would increase. I normally go for 450 degrees - it doesn't burn the timber.

I would not recommend using a gas powered torch unless you have a suitable mask.
