Carpentry and brick work advice

Hello All, First time posting. Can I please have your opinion on the attached photos. It’s not in my husband or my nature to be unkind or complain and this has been keeping us awake as to what to do/say to the contractor who has been on/off this build the last 7 months due to his other work commitments. Up until now the work I would say has been pretty good/ok, but now we are at the final stages I am really disappointed. Photos show work done in last two days. There are more photos of other poor areas but I am limited as to how many photos I can attach. How do we broach our unhappiness with the contractor without causing too much damage to the relationship? Any ideas how we can rectify the carpentry/brick work. A huge thank you for your time in reading this and any helpful comments you can give. Thank you

On and off the job says a lot. Are you the hospital job?

Mortar work you show is pretty dire but most of the timber to masonry joints will surely need sealed so will not look so bad when finished
