Cave system in bathroom

I've found this massive hole in my bathroom behind a missing tile (the previous owner put a whole new set of tiles over the top of it!)

I'm going to replace the whole run of tiles from the missing one and off to the right, but I'm not sure how to make the wall flat again first. The hole goes right back to the brick in some places - around 5cm deep.

Any ideas?

Expanding foam at the bottom and then fill the void with mortar before re tiling
