i will be installing a new combi boiler in my new single storey extension & i would prefer all pipework to go above ceilings & then drop down to the radiators , is this possible also can i use 8mm , 10mm , or 15mm plastic or copper.

You can do that but I would advise you to use copper and 15 mm.

Defo 15 mm; copper where visible, plastic works fine under the floor.

Don't forget to provide a drain-off for each separate drop.
