CD valves are either 1/4 or 1/2 turn, and most people find it easier to remember that the handles turn towards each other or away from each other.
It's relatively easy to arrange that the handles point in a particular direction when they're off. For example:

Perhaps you're different - maybe you'd prefer them to be like this when they're off:
-O -O
If you're really that bothered, then swap the valve bodies around between the sets of taps so that you get what you want.

You could buy some more hot valve bodies.How can I swap them around to make them all shut off clockwise.
