Caravans use 12mm o/d pipes as it minimises the stored water from hot and cold water holding tanks and caravanners shower using the wet, soap/wash, rinse technique. {40 litre water barrels, 10 litres of hot.}

Larger stores or mains water fed could use 'domestic type' 15mm pipework if it works out cheaper or better?
You do
not want to skimp on the cheapest plumbing materials for a habitable space with drinking water involved. Beware of holding tanks and Legionella risks if the temperatures could be suitable for that. Don't forget insulation for frost protection, either.
You can select any of the pipework you wish from the supplier I linked to: 'food grade' pipe is a must if drinking from water out of it.
The 12mm semi rigid pipe (Whale style stuff) was in the linked list near the end iirc, but on the more expensive side cf the reinforced flexible 1/2 inch stuff.
