Chimney haunch? Replacement

Hi guys,
My chimney haunch is cracked and In need of replacing as well as some of the cement skews/fillets. Not sure if I have got the correct terminology. Access is good as it’s a flat roof so I can work quite easily so I would like to have a go myself.

My questions are, what mix of mortar should I use? Do I need to use NHL lime or can I use sand and cement? As you can see the previous haunch has cracked is that likely because it wasn’t thick enough? It looks to have been applied on top of an old haunching so ideally should that all be removed and and a new haunch built up in a thick layer?
