cold walls and mold

Hi all,
In my main bedroom there is some mold starting to show,i have put this down to warm house and cold walls and poor airflow.
I have started to open my windows once a day for a hour or two and to get rid of mold and to cure the cold walls i am going to fix plasterboard to the outside walls.
I'm going to use wooden battens with foil backed plaster board screwed to the wall,and some insulation in the gaps between the battens.
My worries are if i cover the walls so the room is warmer whats to stop the cold and mold acting behind the boarding unseen...? If i use a waterproof membrane could the damp not build up under it to the point where water drops form and run down plaster behind membrane...?
My first choice would be to do cavity wall but i dont have a big enough cavity.... :evil:
I understand the idea is to build a buffer zone so cold wall and warm air dont meet if there anything i have missed...??
