My question is how do i connect a compresion male elbow to these and be in control of where the angle is. ie i would like the compresion male elbow to point vertically down the wall but when tighted it ends up at 10 oclock. any help would be great

You've got the wrong fitting, you need 15mm compression × ½" Male Iron elbows. Seal the threads well with PTFE and you should be able to have them looking whichever way you like, they don't have to be wound absolutely all the way in.
