Connecting up two switches

In the photo you can see a switch for the stairwell light and one for the kitchen light downstairs.

I intend to box in this opening and will need to extend the two switches so they come off from where they are sitting about 100mm.

Can i connect these two cables up and wire them into a double socket switch?

The thermostat is wireless so will just move.

Yes, of course.

You won't have to 'connect up' the cables.
A 'two-gang' switch is just two separate switches in one face plate.
 
I see, great.

So all i need do is take off these switches and extend the current wiring. Because it will all be hidden do i just use a junction box in place of each switch and extend from here into a double switch.

you can do that, but make sure the junctions are still accessible, you could just use the existing backboxes with a suitable blanking face on

the alternative is to see if you can replace the existing cables back to the lights themselves with longer cables
