convecoal bunkers

My 1960's house had two coal bunkers, which are basically very large full height cupboards built into the outside wall. However, previous owners have extended the house and these are now effectively 'inside' in a fully enclosed corridor between the main house and the garage.

I could do with the storage space, but how can they be converted? I tested for damp and they seem OK, although they only have single brick walls. Will I get problems with damp? What should I line them with? I am way outside my level of knowledge.
