Convert these plastic pipes to copper

Can you please advise on how I can cut these pipes fairly low to the ground and convert to copper pipe please.

can I use the existing couplers for instance?

Those couplers look pretty ropey, I'd buy new ones rather than risking reusing them
 
Which system couplers do I need and will they accept copper pipe upstream?
 
Pretty similar to the old JG pushfit, would also recommend they're replaced. Any of the new type push fit fittings will accept copper.

If it's copper throughout then no bother. If you're connecting to the plastic that's currently there then ideally you want to identify the make and then use their fittings/inserts.
 
Assuming that the isolator in your photo below is supplying a tap above, isn't the 'direction of flow arrow' pointing in the wrong direction?...

I noticed that direction issue but intrigued as to how this was working. Should this have allowed water to pass through?

My new valves are definitely the correct way up.
 
Yes, it just flow isn't as smooth, the valve has entry and exit sides so it flows properly through the narrowed bore, a full bore is unidirectional as it has a straight through bore when fully open.
 
If you have a look at the construction of the valve you will find that installing with the flow opposite to the arrow risks blowing out the inner parts when isolated.
