We are looking at buying a house where we'd want to build a single storey extension to the kitchen to form a large kitchen diner. The extension will have a vaulted ceiling - ie no roof space, but we want an island extractor fan in this space. Is it possible to fit an island extractor to a sloping ceiling? Or would I have to form a little platform to mount it to? Also, the ventilation - would it be possible to simply pass the duct through the roof to a vent tile? Or are these not suitable for this purpose?

It depends on the extractor but a fabricator would be able to make a chimney with the required angles quite easily. A roof vent tile will not have sufficient airspace for an extractor - they're intended for venilating roofs only. You'd need a 4" - 6" through vent and rain cowl depending on the fan performance, which depends on the fan and the type of cooking you do eg a wok burner or large range needs more extraction than simmering up some Batchelors Super Noodles.
as said depends on the mountings, suspended rod types will be fine, and can usually be fitted to other types of extractor too but as said the chimney will need modifying accordingly. You can get away ith not being too accurate on this by plaster boarding and plastering after fitting the decorative chimney
