Correct solutions to plastering an exterior solid wall of Edwardian house?

One of the kitchen walls is an exterior wall and is composed of solid brick
What are the correct options for plastering this?

Is one option to use a certain type of plaster board and is that ok to dot and dap that plasterboard or not?
The other solution I've seen mentioned is where battens were used to create a gap with plasterboard secured onto the battens

How would this have been done when the house was originally constructed - would it have been a base coat of plaster followed by a layer of finer pink finishing plaster?

Originally it would have been lime plaster, this helps solid walls to breathe, lime wash paint would have been used to finish. Using gypsum (pink finishing plaster) on solid walls can lead to damp problems.
Another thing to note is that pointing to the external brickwork should also be lime (lime putty mixed with sand) and not cement. Solid walls need to allow the water vapour to evaporate, cement and gypsum stop water evaporation.
