Creating a smooth surface to tile on after removing kitchen wall tiles

Hi all as above will be changing the tiles lm kitchen wall and no doubt it’ll remove some of the finish and leave an uneven surface . Wall seems like it will be plaster board with a skim on . What the best product to use to fill in any holes left / damage created by the tile removal to leave a flat surface to re tile on ? Powder adhesive seems to be suggested a lot ? Or a one coat plaster ? Many thanks
