Dimmer switch with a neon indicator, or ?

Not complicated at all if you install a controller where the makers have had the smarts to realise that it would be a jolly good idea to use a potentiometer which also has a switch.
Indeed. That's why I said "sightly more complicated".

Brilliant. The Manrose thingy is EXACTLY what I'm after. Guess it's a problem with terminology, I call it a dimmer switch with a light Manrose call it a fan speed variable controller. Bit like calling a mouse trap a small rodent manually operated imprisonment and killing device.
Fair enough, but there are a couple of issues for you to consider, if you haven't already. Firstly, as I recently implied, it quite probable that the Manrose controller requires a neutral, so you might not be able to simply replace your existing switch/dimmer with it, without additional wiring, if no neutral is available at the switch position. Secondly, you need to consider how big is the load you are controlling. I suspect that the Manrose controller is intended to control small domestic extractor fans, and will have a maximum load size that it can control (or 'tolerate'!). What is the power of the "central air handling fan extractor thingy" we're talking about?

hopefully the link will work
Interesting. Although the Screwfix listing says that the 'power output' (whatever that may be) is 3W, Manrose documentation says that it is suitable for loads of minimum of 20W and maximum of 200W - so the OP can ascertain whether that's OK for his fan. I've yet to discover whether the controller requires a neutral, but I suspect that it probably does.
