Doorbell transformer wiring

The wiring diagram shows a transformer winding with taps at different voltages. It's alternating current AC.
So as long as one wire goes to the 0V terminal and the other to the correct Voltage of the bell / chime it doesn't matter which is which.
Sorry I meant the supply I can’t see L&N marked
Again it's the primary of a simple transformer and supply is 230V AC so it matters not which is which.
I assumed the picture was of your part installed unit. Why not just follow that 'convention' for the supply connection?
https://www.bgelectrical.uk/uk/fortress-cp/devices/control-devices/CUB1-01 is the makers site and has no useful install instruction leaflet though.
