Just some advice please, I've seen Drywall adhesive appearing quite a bit, would this be ok to put up Gyproc coving?

Yes it would.

It does set very hard so be sure to remove any excess.

Use dry wall adhesive for you coving and like noseall said clean off all the excess with a scraper and finish it off with a sponge , fill all your joints with easifil and sand off with 120 sand paper when completely dry...
