would this be the best to use on a ply overlay as oposed the normal flex adhesive? Any ideas how much area the 11KG bucket covers?

9.3kg kit of DUNLOP 2-PART RAPIDSET FLEX will fix approximately 2m2 based on 3mm bed depth (depending on trowel used).

11.55kg kit of DUNLOP 2-PART RAPIDSET FLEX will fix approximately 3m2 based on 3mm bed depth (depending on trowel used).

And what thickness should floor tiles be laid on?

Dunlop 2 PART RAPIDSET FLEX can be used from a 3mm upto 10mm bed depth.

i'm laying on 12mm ply, what would you recommend? most fllor trails are 9mm are they not?

Use either a thick bed solid bed trowel or a solid bed tipped trowel; either trowel will give a finished bed depth of approximately 4mm once the ribs are collapsed.

would the single part rapid set plus be ok to use?

Dunlop Set Fast Plus
Plywood Overlay:- use exterior grade plywood (at least 15mm thick) which should be screwed down at 300mm centres to an existing timber floor to ensure full support. Prime with a suitable primer such as DUNLOP UNIVERSAL BONDING AGENT.

If the overlay is less than 15mm thick then use Dunlop 2-Part Rapidset Flex.
