Would installing an electric shower on a stud wall tiled above a bath. Cause mositure/mold issues in the wall?

Given you are tiling the wall any way, it wont hurt to put some extra studs in and insulate the supply pipe to stop condensation forming. You should also think about putting some water resistant plasterboard or cement board under the tiled parts to avoid water ingress.
Thanks no issues with water getting in via screw holes etc?

silicon seal before you screw in and it will set in place.
