Can anyone please shed some light on the following? When my cameras are set to day n night auto my sub menu has anti-sat, AGC-margin, AGC-threshold settings but I'm not sure how each differs.

Gain control, you would need to refer to the camera manual as to how it works specifically with a guide as to taking the gain up or down and what to does to the image quality, ie makes brighter, increases/ decreases noise.

AGC Threshold will define the moment (darkness) at which the camera will switch from day to night and AGC Margin is probably the hysteresis to prevent the camera from repeatedly switching around dusk or dawn. Anti-sat might be anti-saturation but I don't know... Probably best to leave them on the defaults unless you're getting unsatisfactory images around dusk and dawn.

Probably a Samsung camera........Ive spent hours/ returning to site and playing with settings BUT in the end we always leave on "default" as its the best all rounder!
