Filling in hinge holes and mortises

Hi,
We are stripping and repainting our quite old door frames, to receive brand new doors.
As the doors were changed few times over the period of flat's existence, multiple old hinge and mortise holes need filling in.
Could somebody advise as to what is the best filler that would allow subsequent re-implementation of hinge and mortise cavities, please?

inlay another piece, cut it all out so as you have a nice uniform recess then glue in another piece of wood of a similar type

yes it is a bigger more skilful job, but long term the results will be far better
