Fitting laminate in kitchen / plinth issue

Looking to fit laminate flooring once the kitchen goes in but I want to leave enough gap for the plinth to sit on top of the laminate and dont really fancy cutting it lengthways afterwards.

Laminate is 8mm plus 3mm for the dual underlay / damp proof sheeting. So an additional 11mm.

What would be the way to tackle this?

Stick some vinyl down

The cheap stuff is only 2mm thick will that be strong enough for a heavy traffic area like a kitchen?

The expensive stuff is £50psm and I really don't want to spend that much!
