Recently moved into a house (typical 1950's semi) and the floor boards across the landing seemed to be sloping inwards.

After lifting a few floor boards I can see that when the heating system was put in they have run the pipes right down the centre line of two floor boards meaning that the inner edges of the boards were not supported properly (was just packed out with scrap ends of wood!).

Obviously I want to rectify this as best as I can but not quite sure what would be the best way?

You can either secure the floor board together with timber below to make one floorboard or sister the joists around the cut outs leaving in timber between each set of pipes.Or rebate a 2x1 into the top of the joist to form a 'bridge'.
