Garage ceiling

Hi all,

we’ve recently had an asbestos ceiling removed from our integrated garage. My plan is that the wiring left behind is sorted by an electrician when he fits the new consumer unit but I want to insulate and plaster board the garage as my son’s room is going to be directly over the garage and it’s cold.
The bedroom has a step down area into the eves. In order to insulate, do I need to fit some wooden boards into the gap on the photo as that void is clearly too big to insulate. If so, is there any specific wood I need to use?
Once that’s done, I was either thinking of PIR boards in between the rafters and then pink plasterboard to seal it?
Or would I be best just putting PIR under the joists and boarding to that? I know it would reduce ceiling height. my only concern is that there will likely still be wiring running between the joists (consumer unit is in the garage so lots of wires).

any advice greatly appreciated.

I have attached photos of the roof space and also the bedroom above so you can visualise the floor boards.
