I was talking to my son-in-laws brother who is a chef, and he said induction hobs are so much cheaper to installing the extractors required for gas, that new kitchens are normally induction as so much cheaper to installing the extractors needed for gas.
Clearly older kitchens which already have extractors fitted then a different situation, but new commercial kitchens cheaper to use induction than to fit the extractors needed for gas.
