Grout efflorescence - help!

Ok, so my kitchen diner was tiled a few months ago. About 25sqm. The grout used was Ultracolour Mapei Black.

The efflorescence is becoming intolerable. I'd say 30% of the grout, and there's a lot of it, now has that white salty crystal markings. What looked like a lovely floor now looks rubbish. Every time the kitchen is mopped, water sits in the grout groves and then becomes white.

Two things... can I remove this? Can I get the grout black again? How can I prevent this going forward?
