The bulbs were recently fitted. Has only been like 2 months. They are definitely LED Gu10 bulbs. The colour change happens after the light has been on for a few minutes. Sometimes its really bright and perfect, then after a few minutes it starts to slowly dim down and then at some point turn pink.How old are the bulbs?
Are you sure they are LED and not halogen?
Has the colour change been permanent, or does it occur after the light has been on for a while?
If they are LED, (among other degradation processes) the packages can suffer from colour shift. A red shift is possibly caused by a reduction in output from the green component of the phosphor coating.
However, a colour shift normally occurs almost imperceptibly over time - and a blue shift is far more common.
Spot damage to individual LED packages, or changes to the optical quality of the bulb, could also lead to chromaticity changes.
But, if the colour change occurs when the bulb is on, a change in output of the driver may be more likely. If the change is noticed over multiple spotlights, some loose wiring connections may be to blame.
Simply put, try a new bulb!

I wouldn't put too much money on that - a neighbour of mine recently installed 'mood lighting' in his bathroomOh, just realised there in your bathroom, so dimmer switch unlikely

Nope not a dimmer switch. Just a normal light switchAre they wired to a dimmer switch, if so the lamps need to be compatible with the dimmer
