H2 skim from plasterboard onto Bonding.

Advice needed guys for a competent diy'er, I need to sort out this room (including electrics and polystyrene!) as in the link below. The wall will be dry lined, but to the right of the last batten you can see where a doorway has been 'blocked' up but not proud to the batten or enough space left to attach a plaster board. The difference varies 2 -15mm from being flush. I thought of Bonding the right bay flush to the plaster board on the left but this means in some areas it will be 25mm deep. So questions..
Is that ok or should I render with sand/cement?
If I bond will it harden enough for me to skim the wall the same day?
Will overlapped 3" scrim stop a crack on the join line of plaster board to bonding?
Is there a better way?
