I am fixing a heavy wooden sign to outside brickwork and will be using heavy duty anchors. I am familiar with plastic wall plugs for fixing screws to walls. Do I simply put the metal anchor into an appropiately sized hole in the wall in the same wall as wall plugs?
Thanks.

depends what you call heavy duty anchor.

if it is a rawl bolt then yes (but you should tighten it first,), then undo, then add wha it is you want to anchor then tighten again

I reckon those are better in concrete, walls are often relatively soft. I usually use Frame Fixings; they grip very well, as deep as you like up to 150mm long. For something like a boiler or heavy sign where the load is all down rather than out, they're hard to beat. Far better than Hammer fixings, which look similar.
