Help - having a wall built - are they having a laugh?!

Thank you for all of your comments, i really appreciate it - each to their own trade and frankly this couldnt be further from mine, so am clueless.

So he has finished the wall and is now doing exactly how some of you describe, raking out and pointing. Have to say, its taking him forever, 2 days to do both sides of 2 walls, but it actually looks great, hes painstakingly precise about it.

Perhaps it is something to do with him probably being in his 60s and polish?

Either way, hes getting there, have been giving him cake to keep his strength up!

As others have mentioned it's how things were done many years ago. The pointing on my existing house (built 1902) was done in this way. So perhaps your builder was trying to match the style on your house, in other words he could be a perfectionist rather than the fool others have tried to make him out to be.

As long as you are not paying him by the day that sounds like a result. If a little slow. I'd like to think it was chocolate cake but something's telling me Victoria sponge.
