Does anyone know if a Hip or Hipped roof can be built so that the beams are exposed and roof lights put in.

Roof to cover 7x3.5 meters and adjoined to gable wall.

yes this can be done.

it may mean hefty rafters, hip blades and ridge element, but it is possible to omit the ceiling joists.

the issues of spread are still relevant but less so than with a gable roof.

the corner details of the wallplate would almost certainly need reinforcing with dragon ties, and the ridge built into the gable brickwork.

i'm not sure though just how you will expose the beams and deal with the issue of insulation, unless you insulate and counter-batten topside.

also, hip splayed cuts are fussy and tricky at the best of times, exposing all these cuts will mean some pretty tight carpentry work, as well as using p.a.r. timber. make sure this is factored when sizing the timber.
 
that pretty much says it all with regards to insulation either as noseall says insulate over the rafters or oversize the rafters by the relevant amount to insulate between them.
