hole size for 2* 2.5mm twin and earth cable

what size spade bit do I need to pass the above through some timber please?

20mm without struggling. You may be able to get away with 16mm

Why can't you hold two pieces of cable together and measure them?

Drill the biggest hole you can get away with structurally. Be careful when pulling the second wire through if you aren't threading both wires simultaneously; if it rubs on the first with reasonable pressure the friction will easily melt away the PVC outer sheath of the first wire, possibly the inner insulation on the cores
