I will give em a go, but it sounds like its the sink for them.

We do use wine in risottos, casseroles, beef bourguignon etc, if they arent oxidised maybe I could cook with em.

One of them is actually French cidre.

Most certainly, however high end bordeaux's are for laying down for a good number of years. Had a nice case of '97 Haute d'Yquem in bond for some time.
