How thick for a door jamb?

Okay, sounds good; you should be able to get away with 15mm, possibly 10, but that'd be pushing it

Oh I'll just buy some stripwood or something. Basically I have two doors available, one 700mm wide, the other 800mm wide. I'm trying to get the doorway as wide as 780mm so I can use the 800mm one (cut down).

doors often dont allow more than 6mm an edge
the opening you have sounds perfect for a standard 2ft 6" door[762mm] without all the farting about :rolleyes:
 
are they solid or veneered
if they are lipped the lipping may only be 6mm

They're solid pine. I've already used eight of them in other parts of the house, so I know how much they can take.
 
ok fair enough just checking as descriptions can be very misleading :D
