I have this idea that I want to re-clad the exterior of my house.

It's likely asbestos so I'll be getting professionals to remove the existing cladding and eaves.

After they've finished that, I'd have to quickly waterproof the exterior of the house as there will be a bit of time between having the asbestos removed and getting the cladding and eaves done.

What do I need to do to protect the internals of the house before I begin doing the insulation, waterproof membrane, and cladding?

Is it timber frame? If so poly membrane and battens would be simplest. Screw the battens so you can remove them easily as you work around the house.
