I need to remove a towel radiator to make way for renovations, though eventually I will replace it. What's the procedure?
Whole CH runs off the combi boiler, everything uses plastic speed fit, and the towel radiator is upstairs.
Do I cap off the two ends or join them together? With what kind of fitting? (I am a total plumbing newb)

Shut both rad valves off, check that heating still works OK. If it does then cap off (using a demountable stop end suitable for whatever brand of pipe you have - inserts may be needed) and remove.
