Insulating a, now internal, single skin garage wall

I have had a small single storey extension built off the back of the brick single skin garage.
The 3 new walls are insulated cavity (brick & block), the roof is insulated and the floor is concrete with a dpm. All 4 internal walls and ceiling have been boarded and plastered.
I need to insulate the garage side of the single skin wall, 18mm ply would be the ideal material as shelving needs to be put up. Any advice on method and materials would be greatly appreciated.
