Insulating gap between pitched roof/internal

I want to insulated the gap between the roof and the building internals. Also I presently have no insulation around my dormer walls.

What is the best type of insulation to use for this purpose? I assume some type if rigid board.

Also what is the best way to fix the insulation in position?
