I think about 800mm is about minimum for door size

i haven't got a clue 
but anything under 27" is going to greatly restrict what you can get through the door
especially if your coming up a steep narrow stair and the doors at right angles to the stairs and the walls on the wrong side as you go in the door
and if you reduce the hight to say 6ft 1"you wont get any6 ft furniture through the door because of the approach angle and the door stop
