iPhone - account removal

I am more than happy to admit I know jack 'shoot' about the iPhone, and really don't want too either.

Problem is this.

Phone was registered with Apple with username [email protected]. Username was then changed to [email protected] via laptop on iTunes site. Since this change the iPhone won't download app's as it doesnt recognise the saved abc123 username. I am assuming that it is stored somewhere in the iPhone equivalent of a temp file. How do I delete this and force it to ask me for a username and password at which point I can enter the new user and pass.
