kitchen degreaser

Hi All ,
I've been asked to decorate a cafe.
good news but the kitchen hasnt been touched for eight years so is pretty greasy everywhere.
what thoughts are there as to best way to degrease and clean prior to decorating, wondering if anyone uses a brand of industry safe cleaner and where to get it from

a commercial kitchen is better with stainless steel cladding. Tiles as a poor second, washable gloss surfaces a long way behind.
 
thanks for that mate
meant to say that they want it as is, at present. tiles on bottom half and paint above. so wondering what product or process is best to clean these surfaces before repainting.
Ceiling is suspended tiles so these would need cleaning too! bit of a palaver but that's what the customer wants.

would be a lot easier to replace the ceiling tiles, though I don't know what they cost
