It depends on what is upstream of the isolator switch. As it was for an extractor fan, I'd expect it was powered from a lighting cct. If it is the answer is no, unless you create a fused spur that will protect the rest of the cct from becoming overloaded and tripping the breaker/blowing the fuse if a heavier load is plugged in (after all, a socket can have a 3kW device connected to it!). The breaker/fuse will protect the cct wiring but it is risking constant trips. I would remove the plug and use one of these

If it is via a fused spur from a power cct then you can go ahead as you plan.
Also, remember that the regs require there to be an accessible means of isolation within 2m of the unit, so you may need to include a DP switch upstream of the connection.
And, as it's in a kitchen, it is notifiable work, so the LABC or a self certifier need to be involved.
