Kitchen tap - no isolation valve

I am in process of changing my kitchen. First fix electrics been done, having it plastered on Thursday. I've left the sink in at present but wanted to remove for plastering and then expected it to remain out of use until plumber comes to put in new pipework.

My issue is that there are no valves on the pipes to the taps. I can use the external stop cock to isolate the water whilst I remove everything, but then am not sure how I go about sorting the pipe so the water can be turned back on. All I can think is to reinstall the taps (with no sink etc attached) to maintain a seal until the plumber comes - is this feasible?
