Thanks for the info, but also what is the best way then to ensure the first course of blocks are level if it is out slightly

prior to building off the dpc, set out four corner datum pegs, that are all level.
when you build up, you can then refer to the datum to see how that particular corner is progressing. just measure from the datum to the top of the brick/block.
