Levelling wooden floor

Hi, I am removing old floorboards in upstairs kitchen as they are in bad condition. The floor bows down to the centre by 50mm! I am going to level by attaching 4" x 2" timbers to side of joists. My question is what type of sheet timber (chipboard or ply) and grade and thickness to use bearing in mind i am going to tile the floor (using flexible adhesive).
