Loosing Plumbing

I am going for function as opposed to aesthetics

To avoid future issues, where should one drill? Can leaks occur from the kink in the washing machine hose?

Kinks in the hose are never a good idea, puts strain on the structure of the hose, and can cause premature failure of the hose. Find a route that allows a gradual curve in the hose. Ditto that flexi on the cold supply to the sink, I'd be concerned about the strain on that as it bends sharply from the tee fitting.
