Metal back boxes?.

Hello again,
All our sockets and switches are wall mounted and I want to flush mount them.
I'm busy chasing for cables and cutting recesses for the boxes (by the way the Armeg that I borrowed works a treat in Victorian softish brick).
Can I re-use the existing plastic back boxes or is there a technical/safety reason for using metal ones?.

You can't flush in plastic surface pattresses, you just can't... for a start it'd look a complete mess and have a gap around it!
 
How would you finish off the wall given that you wouldn't be able to extend plaster/filler under where the switchplate goes?

What would you do if the box ended up not perfectly level?
